2 cups Green Beans, ends trimmed off 12 small Cherry tomatoes, cut in half 12 medium Black olives, chopped roughly 2 tbsp Olive oil 1 tsp Basil, torn roughly Salt and pepper, to taste

| Preparation |
1. Trim the green beans tips off. Boil water and blanch the bean for about 2 minutes and then dunk into ice water to stop cooking. How do you know when they are good. Look for the deep color change.
2. Cut the cherry tomatoes into halfs. Take the pit out of the black olives and roughly chop.
3. Heat oven at the highest it goes. In a roasting pan, put all the veggies. Drizzle the oil over it. Put torn basil over the top. Toss the veggies so the oil coats them. Salt and pepper.
4. Put roasting pan in oven for approx 12 minutes until the veggies are warm. Remove from oven, put in server, toss once more, serve hot. |
