Breaded Herbed Black Olives

Ingredients
1 jar black olives, pitted
1/4 cup soy flour
2 tbsp Parmesan cheese, finely grated
1 tsp garlic powder
Salt and Pepper, to taste
2 medium Eggs, beat
1/4 cup LC bread crumbs
4 tbsp Olive Oil
Preparation
1. Rinse off your olives. Shake off all excess water. Set aside.

2. Set three bowls out. In one, put soy flour, second, the egg, third, the bread crumbs (I used the LC Breadmachine bread listed), the salt and pepper, cheese, and garlic powder.

3. Take each olive, toss in flour, then the egg mixture and then press into the bread crumb bowl. Set aside.

4. Heat oil in a skillet. Then drop in the olives (do not overcrowd) coooking quickly until breading starts to brown. Once all of them are cooked, put on a paper towel.

Note
I like this alone but they are even better if you serve with a cream dip of some sort. I will leave that to your imagination.
