Recipe By Garth Lamson
Category Appetizers; Atkins
Main Ingredient Canadian Bacon
Cuisine Style Party-land
Yield 22 Pieces
Preparation Time 5 min
Cooking Time none
Equipments Micro-grater, paper towel

Ingredients
2 oz Hormel Canadian Bacon, (the rounds)
3 slices Tomato, chopped in small squares
2 oz Parmigiano Reggiano, finely grated
1 1/2 tsp Basil, finely chopped
Preparation
1. In small skillet brown the canadian bacon rounds. As they brown, set them onto a paper towel to absort excess fat. They will crisp more as they cool.

2. Cut the slices of tomato like you are cutting a pie up. Cut into little triangles. Grate the cheese very fine.

3. To assemble, place a bacon round down, top with piece of tomoto and put a pinch of cheese on top. Before servinger, sprinkly a bit of basil on the top. Very simple.
