Palak Panir (Spinach w/Feta)

1 tsp Ginger, chopped
1 medium Jalapeno, seeded and minced
1 tsp Coriander, ground
1/2 tsp Paprika
1/2 tsp Cumin, ground
1/2 tsp Turmeric, ground
1 tbsp Ghee
2 large Spinach, bunches
5 oz Feta Cheese (Really, just a few blocks)
1/2 tsp Garam Masala
Salt & pepper, to taste
1. Plcae ginger and chili in a food processor with a few spoons of water. Add the coriander, paprika, cumin, and turmeric and blend to form a smooth paste. Scrape the paste into a bowl.
2. Heat the ghee (this is just clarified butter) in a large saucepan over medium heat. When it is hot, add the spice paste and the spinach. Fold in the spinach.
3. Cook until the spinach reduces in size and is a bright green.
4. Add in the feta cheese cubes. and the garam marsala. Cook another 5 minutes (approx) until it is blended
and smooth. Serve hot!

There are about a million versions of this recipe. Mine is just a really simple one. You can really into this. Some are made with Panice which is a homemade cheese. This is a great Indian side dish. We sometimes add poppy seeds also.
