Parsley Pesto

Ingredients
2 cups Parsley, fresh
1 clove Garlic
1/2 cup pine nuts, toasted
1/4 cup Parmesan cheese
1/4 cup Olive Oil
1/2 medium Lemon Juice, fresh, juice of 1 lemon
1/2 tsp salt
1/2 tsp pepper
Preparation
1. Put your garlic and pinenuts into food processessor. Blitz thouroughly.

2. Add the tightly packed parsely in your food procesor (or pestal and mortar) and pulse together.

2. Add the parmesean cheese. Pulse. Add the lemon and oil a bit a time. This is a taste as you go recipe.

Note
You can mix this into cream cheese. I used it in the picture on a mustard, pesto chicken. Very tasty.
