2 medium Turnips, shredded 1 tbsp Mustard, whole grain 4 tbsp Basil, and chives (1/2 cup) 1 cup Mozzarella, shredded 1/8 cup soy mayo Salt, to taste Pepper, to taste Vegetable oil, (to fry the cakes)

Spinach leaves 1 medium Tomato, roma 1 medium Avacado, sliced 1/2 small Onion, red, sliced

| Preparation |
1. Squeeze as much moisture as you can grom the grated turnip and sweet potato. Place them both in a bowl. 2. Add the mustard, herbs, mozzarella, and soy mayo. Add seasoning then stir well to combine. 3. Heat oil in a large fryaing pan and cook 1/4 cup batches of the mixture. 4. Remove and drain on paper towel. Make sure to drain well. 5. To put on a plate, you place a cake down, then tomato slice, then spinach, then avacodo....you get the drift.
