Spinach Pie (Spanakopita)

Ingredients
10 oz Spinach, (if frozen, thawed and well drained)
16 oz Cottage cheese
4 medium eggs
1 tbsp salt
1/4 lb feta cheese
3 slices Mountain Bread, (or Crust of choice)
Preparation
1. If you are using fresh spinach, you need to cook the spinach first, and drain it well.

2. Mix together with remaining ingredients.

3. Grease a pie plate with some oil, put a layer of Mountain Bread (or atkins crust of choice) that has been buttered or brushed with oil in the bottom of the pan.

4. When the ingredients have been well combined, spread on the crust in the pan evenly. Cut the second Mountain bread into triangles and scatter on the top. Bake for about 30-40 minutes at 160C/325F.

Note
Mountain Bread is a product sold in Australia. I do not know how to make it. It is a very very thin OAT bread. Even thinner than a tortilla, it works great as chips, wrap bread. If you find something in the states like this, give me a note.
