|1 tbsp Olive oil
6 medium Italian Sweet Sausage
2 medium Onion, roughly chopped
3 stalks Celery, chopped
1 tbsp Oregano
2 tbsp balsamic vinegar
1 tsp Lemon Juice
3/4 tbsp Basil, ground or roughly chopped
2 tsp Garlice powder
12 medium Mushroom, quartered
1/4 head Broccoli, chopped
2 cups Chicken broth
2 cups Water
Salt and pepper, to taste
|1. In stock pot, heat a bit of olive oil. Brown the sausages on all sides. Remove and set aside.
2. Add the hard veggies to the stock pot. Add the spices. Mix the veggies to cover with spices. Put your vinegar and lemon jiuce in. Cover on a low heat and sweat for 3-4 minutes until they are soft.
3. Place the broth and water in the pot. Mix. Add the sausage and other veggies. Throughout the simmering, you should mix and break up the sausage as needed. Cover and simmer for 1 hr.
Per Serving: 345 Calories; 29 g Fat; 10 g Sat Fat; 65 mg Cholesterol; 1035 mg Sodium; 5 g Carb; 1 g Fiber; 16 g Protein.
|Note: When you buy Sweet Sausage, try and find the medium vs the mild. It will give the stew a nicer flavour. If you have time, this is a great crock-pot recipe.
